Canning, Freezing Classes Offered In Montrose

Learn how to can or freeze fruits and vegetables at a class offered by Penn State Extension. Whether you are new to preserving or want to learn the latest methods, you will find helpful information.

Two classes will be offered, Home Canning Basics and Good Eating from the Freezer. Each class will cover how to preserve safe, high quality food using guidelines from the U.S. Dept. of Agriculture. The canning class will show how to use the pressure and boiling water canners. During the freezing class blanching and packaging vegetables for the freezer will be shown. Equipment will be on display. Directions and recipes will be available to take home. Cathy Guffey, Extension Nutrition, Health, and Food Safety Educator will teach the classes.

Home Canning Basics will be held on Tuesday, July 10, from 6:30 to 8:30 pm. Good Eating from the Freezer will take place on Thursday, July 19 from 6:30 to 8:00 pm. Both classes will be held at the Susquehanna County Office Building, 81 Public Avenue, Montrose.

The cost for each class is $10 per person or household. Scholarships are available to help cover the class fee if needed. The fee will be collected at the door. Contact the Susquehanna County Extension Office to sign-up at least two days before the class. Call (570) 278-1158 or email susquehannaext@psu.edu.

Bring the dial gauge of your pressure canner to be checked after a class. Gauges should be tested for accuracy every year. It is not necessary to bring the whole canner. Only the gauge is needed for testing.

Copies of U.S.D.A.’s Complete Guide to Home Canning and the University of Georgia’s So Easy to Preserve book on canning, freezing, and drying will also be available to buy.

Additional classes can be scheduled for groups of ten or more. Contact Cathy Guffey at (570) 265-2896 or cbg1@psu.edu for more information.

Herbal Medicine: A Nature Walk

The Earth provides medicine for people and itself. This is the primary principle that herbalist Peeka Trenkle has taught during her many years as an herbalist and homeopath and that participants will discover on the nature walk she’ll lead in Florence Shelly Wetlands Preserve.

The walk will be held on Sunday, July 8 at 2:00 p.m. It will begin in the preserve parking lot, where the disturbed soil has acted as a nursery to many different kinds of common plants, often considered weeds such as plantain, Queen Anne’s Lace, and goldenrod. We will then walk along the trails of the preserve and Trenkle will discuss how plants grow in very specific kinds of terrains, including wetlands, forested areas, and an open meadow. Along the way she will identify medicinal plants, discuss their history, and describe their healing properties. Her familiarity with plants, however, extends beyond an ability to simply name them or even to acquire a list of their medicinal properties.

“Modern science tries to break down plant remedies into their active constituents,” Trenkle says. “We are taught to look at plants as potential drugs. A more holistic perspective is to look at the plant remedies in a whole plant way—taking into consideration the plant’s habitat, growing habits, morphology, history and energetics. Plants have an intelligence that matches our human needs precisely.”

Peeka Trenkle is an herbalist and homeopath with a private practice in New York City and New Jersey. She has been on the faculty of the New York Open Center for sixteen years, where she teaches Green Medicine, a long-term training in herbal medicine. She has been featured on Oprah Winfrey’s Oprah and Friends with Dr. Mehmet Oz and she speaks at numerous natural health conferences.

Walk participants will meet at the preserve parking lot one mile north of Thompson, PA on Route 171, opposite Stack Road. The walk, which will last about two hours, is free and no reservations are necessary. For further information, contact Trebbe Johnson (570-727-4272).
